چکیده
Aim: This study was planned to determine the effects of mint and parsley extracts, vinegar, chlorine on S. aureus load in lettuce leaves. It also carried out evaluate effectiveness a salad dressing with appropriate organoleptic properties, developed by researcher based extracts. Material Method: The samples, which is difficult vegetable clean. inoculated before disinfection. 200 ppm/L chlorine, mint, extracts as 50 mL/L from each were used treatments for 5 10 minutes. dressing, prepared using specimens either dipped or kept p<0.05 accepted statistically significant. Results: According results, reduction levels caused disinfectants found be significant (p<0.05). In comparison control group, reductions all applications significant, best seen 15 minutes vinegar (p=0.01). When analyzed, it that (p<0.00). overall score terms properties 3.9±0.96 points. Conclusion: results prove disinfecting effect natural has been shown their use can effectively reduce microbial contamination during serving.

Modeling the dose effects of soybean oil in salad dressing on carotenoid and fat-soluble vitamin bioavailability in salad vegetables.
Background: Previously, we showed that vegetable oil is necessary for carotenoid absorption from salad vegetables. Research is needed to better define the dose effect and its interindividual variation for carotenoids and fat-soluble vitamins. Objective: The objective was to model the dose-response relation between the amount of soybean oil in salad dressing and the absorption of 1) carotenoids, ...
متن کاملThe Effect of Emulsifiers and Stabilizers in Oil and Vinegar Salad Dressing
Emulsifiers and stabilizers are known to be effective agents of emulsification. When used in an oil and vinegar salad dressing, they contribute to significant changes in density, viscosity, and color when compared to the control which contains no emulsifiers or stabilizers. The stabilizer used was xanthan gum and the emulsifier used was lecithin. It was found that the control remained the dense...

متن کاملThe effect of ZnO nanoparticles on bacterial load of experimental infectious wounds contaminated with Staphylococcus aureus in mice
Objective (s): Bacterial infection is an important cause of delayed wound healing. Staphylococcus aureus (S. aureus) is the main agent causing these infections. Zinc Oxide (ZnO) nanoparticles have antibacterial activity and also accelerate the wound healing process. The aim of the present study is to evaluate the effect of ZnO nanoparticles on bacterial load reduction of the wound infection. M...
متن کاملThe effect of essential oils on methicillin-resistant Staphylococcus aureus using a dressing model.
Patchouli, tea tree, geranium, lavender essential oils and Citricidal (grapefruit seed extract) were used singly and in combination to assess their anti-bacterial activity against three strains of Staphylococcus aureus: Oxford S. aureus NCTC 6571 (Oxford strain), Epidemic methicillin-resistant S. aureus (EMRSA 15) and MRSA (untypable). The individual essential oils, extracts and combinations we...
